-Cole Slaw with Creamy Dressing
12 servings = less than 1 gram carbs per serving
4 cups shredded green cabbage
2 cups Chinese cabbage, shredded
1 baby carrot, grated on a hand grate
1 cup real mayonnaise, not low fat
2 tbsp. cider vinegar
2-3 tbsp. heavy cream
1/2 tsp. celery seeds
3 tbsp. Splenda-a non-calorie, zero carb sweetener
1 1/2 tsp. black pepper
1/2 tsp. sea salt
Core and fine grate both heads of cabbage, rinse in colander, spread on towels to dry, pat dry to remove all water. Drop cabbage and carrot into a large salad bowl, toss lightly with salt and pepper.
In a medium sized bowl combine Cole slaw dressing ingredients, whisk together, taste adjust for sweetness.
Pour dressing over cabbage and carrot mixture toss gently to cover all ingredients. Cover with cling wrap and refrigerate until serving.
